This morning, I had a chance to indulge in one of my favourite breakfasts… homemade banana pancakes. On a cool, overcast kind of day, I can’t think of anything better after a brisk walk and a tasty coffee. Not only is the smell of them cooking comforting, they are also very addicting–one bite leaves you wanting more, I promise. If you are like me and you love bananas, then this griddle cake batter recipe is for you.
They are really easy to make if you have a couple of ripe bananas on hand and they are even good for those of you who are looking for gluten-free or dairy-free options, as you can substitute in the use of all oat flour or non-dairy milk options. I am lactose intolerant so I just use my lactose-free skim milk.
I like them best with a tiny bit of butter and my mom’s homemade saskatoon berry jam. Together, it is a smooth (kind of), tasty addition to my tummy. Of course, you can slather them in maple syrup or whatever else tempts your taste buds. Peanut butter lovers might even top them with that since everyone knows that PB and bananas (or jam) make a great combination.

As an aside, there are many other great recipes in this handy book for those of you who suffer from acid reflux like me, or for those who are simply looking for a more alkaline approach to your eating since we know that too much acid in our systems has been linked to many diseases, including cancer. I bought it at the recommendation of a good friend after having a bad reflux relapse and I love it. It is a well-used find that is always within arm’s reach in our kitchen. In fact, just yesterday, my husband helped me make a potato/carrot/ginger soup recipe from the book, also delicious and friendly for one’s digestive tract. Guess what I’m having for lunch today? 😉
